Astringent

A tactile sensation in tasting coffee. Astringency can be classified as papery, drying, sour, or a combination of all of these feelings. If a coffee is tasting astringent, it is usually an indicator of an issue in the roasting process. This is often an outcome of a roast running too hot, too fast, and ending underdeveloped.
