Carbonic maceration coffee is a processing method borrowed where whole, intact coffee cherries are fermented in a sealed, carbon dioxide-filled tank. The process was borrowed from the wine industry. The fruit ferments from the inside out without oxygen, breaking down sugars and pectins inside each cherry and producing intense, fruit-forward, and jammy flavors.
