Mucilage
The sticky, sugary layer between the pulp and the bean in coffee cherries.
The sticky, sugary layer between the pulp and the bean in coffee cherries. Mucilage is removed during washed processing, though other coffee processes i.e. the honey and natural processes leave mucilage on for a sometimes sweeter, less acidic, and more complex flavor profile. How much mucilage is left on the bean will also impact its final color.
