A large, flat outdoor space where coffee beans are spread out under the sun and raked regularly for even drying. In this method, coffee is spread into layers 2–3 cm deep (washed or wet process) and 5–6 cm deep (natural or dry process). Roasters appreciate this traditional method for even drying and balanced flavors in the consumer’s cup.
