Variety

Refers to the specific subspecies of coffee plant i.e. Arabica, Robusta, Liberica (or specific sub-varieties within these species) that impact flavor and yield. Roasters who have a command of variety can tailor roast profiles to bring out the best characteristics of each bean type. Consumers may or may not know varieties by name, but can consistently isolate common characteristics (the smooth and complex taste of Arabica vs. the intense and bitter taste of Robusta) in their cup.
