The intentional addition of selected yeast strains to depulped or whole coffee cherries during fermentation. This controlled method suppresses wild microbes while creating an element of control in fermentation. Different strains of yeast have different flavor profiles. Yeast inoculation often introduces complex flavors of tropical fruit, and floral notes into the cup.
